Strawberry-Mint Syrup

There are few things quite as refreshing as a tall glass of lemonade on a hot day... or whenever you're thirsty.  However one of those "few things" is Strawberry-Mint Lemonade.
  I mean sure you can make yourself a quick one if you grab some lemonade add a few strawberries and off you go.  However, should you have to turn the blender on every time you feel outstandingly parched? I THINK NOT...  Mainly cause I am the father of two kids and value quiet time more than... um... um....  OK, I just value it, PERIOD.... Back to the blender; I THINK NOT, so here is a quick and simple way to get your fix if its 3:00 am and you must be lonely (matchbox20 reference) and any other time of the day.   By the way, this works with most berries, not just Straw...s

Here are your ingredients.
1 lb  Strawberries
2 cups of sugar
1 stick of mint all pictured below...
and a heavy bottom pan.
NOTE: Sugar can vary depending on how sweet your strawberries are.  Sweeter berries = less sugar, more tart berries = 2 cups of sugar.

So, noticed that the strawberries are sliced this will make it easier for the juice to ooze out and overall will make everything go faster.  But its your choice.

Mint before infusing

Put them in the pan, with no water, on medium high, add the sugar and let it come to a simmer until it looks "soupy"  then add the mint leaves, fold the leaves in, remove from the heat and cover for 15 minutes to allow the mint to infuse.  It wont look so awesome once you take the lid off, but it will taste great, now you must ask yourself: "Self, do you really want to fish mint leaves out after blending?" I suggest  if you have an immersion blender,fish them first then immerse-blend away, if not then dump it in a blender and they will disappear.  Once your mix is liquefied you can put it in a squeeze bottle and refrigerate it and it will be ready whenever you have a craving for some awesome refreshment just add some lemonade or some other lemony flavored carbonated beverage.
